Ingredients
- 🥚 Eggs – 4 large

- 🫑 Bell pepper – ½, diced
- 🍅 Cherry tomatoes – 1 cup, halved
- 🌿 Fresh herbs (oregano, basil) – 2 tbsp, chopped
- 🧀 Feta cheese – 2 oz, crumbled
- 🫒 Olive oil – 2 tbsp
- 🧂 Salt and pepper – to taste
Instructions
- 🔥 Heat olive oil in a skillet over medium heat. Add onion and bell pepper, cook until softened.
- 🍅 Add cherry tomatoes and cook until they release their juices.
- 🍳 Crack the eggs directly into the skillet, spacing them evenly.
- 🧀 Sprinkle feta cheese and herbs over the eggs.
- 🥘 Cover the skillet and cook until the eggs are set to your liking. Season with salt and pepper.
