Ingredients

  • 🫒 Olive oil – 2 tbsp
  • 🧂 Salt and pepper – to taste

Instructions

  • 🔥 Heat olive oil in a skillet over medium heat. Add onion and bell pepper, cook until softened.
  • 🍅 Add cherry tomatoes and cook until they release their juices.
  • 🍳 Crack the eggs directly into the skillet, spacing them evenly.
  • 🧀 Sprinkle feta cheese and herbs over the eggs.
  • 🥘 Cover the skillet and cook until the eggs are set to your liking. Season with salt and pepper.
