Ingredients

  • 🍜 Khao Soi Noodles – cooked
  • 🍗 Chicken or Tofu – cubed
  • 🥥 Coconut Milk – 1 can
  • 🌶️ Red Curry Paste – 2 tbsp
  • 🥕 Mixed Vegetables – sliced
  • 🧅 Onion – sliced
  • 🥜 Peanuts – chopped (for garnish)
  • 🍋 Lime – wedges (for serving)

Instructions

  • 🔥 Heat oil in a wok or large pan. Add curry paste and stir-fry until fragrant.
  • 🍗 Add chicken or tofu and stir-fry until cooked through.
  • 🥥 Pour in coconut milk and bring to a simmer. Add vegetables and cook until tender.
  • 🍜 Add cooked Khao Soi noodles and toss to coat with the sauce.
  • 🥜 Garnish with chopped peanuts and serve hot with lime wedges.
