Ingredients
- 🍜 Khao Soi Noodles – cooked
- 🍗 Chicken or Tofu – cubed
- 🥥 Coconut Milk – 1 can
- 🌶️ Red Curry Paste – 2 tbsp
- 🥕 Mixed Vegetables – sliced
- 🧅 Onion – sliced
- 🥜 Peanuts – chopped (for garnish)
- 🍋 Lime – wedges (for serving)
Instructions
- 🔥 Heat oil in a wok or large pan. Add curry paste and stir-fry until fragrant.
- 🍗 Add chicken or tofu and stir-fry until cooked through.
- 🥥 Pour in coconut milk and bring to a simmer. Add vegetables and cook until tender.
- 🍜 Add cooked Khao Soi noodles and toss to coat with the sauce.
- 🥜 Garnish with chopped peanuts and serve hot with lime wedges.
