Ingredients

  • 🫘 Mixed beans – canned or cooked
  • 🧅 Onion – chopped
  • 🧄 Garlic – minced
  • 🌶️ Chilli powder – to taste
  • 🍅 Diced tomatoes – canned
  • 🌽 Corn – frozen or canned
  • 🧅 Smoked paprika – 1 tsp
  • 🌿 Vegetable broth – 4 cups

Instructions

  • 🔥 Sauté onion and garlic in a pot until softened.
  • 🌶️ Add chilli powder and smoked paprika, cook for 1 minute.
  • 🍅 Stir in diced tomatoes, beans, corn, and vegetable broth.
  • 🥘 Bring to a simmer, then reduce heat and cook for 30-40 minutes, stirring occasionally.
  • 🥣 Serve hot, topped with your favorite toppings like sour cream or cheese.
