Ingredients

  • 🥚 Eggs – 6 large, separated
  • 🍚 Sugar – 150g granulated
  • 🌾 Flour – 75g all-purpose, sifted
  • 🥔 Potato starch – 75g for lightness
  • 🍋 Lemon – zest of 1 fruit
  • 🧂 Salt – 1 pinch

Instructions

  • 🥣 Whisk the egg yolks with sugar and lemon zest until the mixture is pale and thick.
  • ❄️ In a separate clean bowl, beat the egg whites with a pinch of salt until stiff peaks form.
  • 🥄 Gently fold the flour and potato starch into the yolks, then carefully fold in the egg whites.
  • 🍰 Pour the airy batter into a greased bundt or sponge mold and bake at 150°C (300°F) for 40 minutes.
  • ✨ Allow the cake to cool completely before unmolding and dusting with powdered sugar.
