Ingredients
- 🐔 Whole Chicken – about 4 lbs
- 🍋 Lemon – 1, quartered
- 🌿 Herbs (Rosemary, Thyme) – 2 sprigs each
- 🧄 Garlic – 4 cloves, minced
- 🧅 Onion – 1, quartered
- 🥕 Carrots – 2, roughly chopped
- 🥔 Potatoes – 4, quartered
- 🧂 Salt & Pepper – to taste
- 🫒 Olive Oil – 2 tbsp
Instructions
- 🔥 Preheat oven to 400°F (200°C).
- 🍗 Pat the chicken dry. Stuff the cavity with lemon, herbs, and garlic.
- 🥔 Toss the vegetables with olive oil, salt, and pepper. Arrange around the chicken in a roasting pan.
- ⏲️ Roast for about 60 minutes, or until the internal temperature reaches 165°F (74°C).
- ✨ Let rest for 10 minutes before carving and serving.
