Roasted Bell Pepper Linguini Pasta

Ingredients
- 1 lb linguini pasta 🍝
- 3 bell peppers (red, yellow, orange), cored and quartered 🫑
- 4 cloves garlic, minced 🧄
- 1/4 cup olive oil 🫒
- 1/4 cup grated Parmesan cheese 🧀
- 2 tablespoons fresh basil, chopped 🌿
- 1/2 teaspoon red pepper flakes (optional)🌶️
- Salt and black pepper to taste 🧂
Instructions
- Preheat oven to 400°F (200°C).🌡️
- Toss bell peppers and garlic with olive oil, salt, and pepper. Spread on a baking sheet. 🧑🍳
- Roast for 25-30 minutes, or until peppers are tender and slightly charred.🔥
- Cook linguini according to package directions. Drain, reserving about 1/2 cup of pasta water.🍝
- In a blender or food processor, puree the roasted peppers until smooth. 🌶️
- In a large skillet, combine the pureed peppers and cooked pasta. Add a little pasta water if needed to reach desired consistency.🥣
- Stir in Parmesan cheese, basil, and red pepper flakes (if using).🧀🌿🌶️
- Season with salt and pepper to taste. Serve immediately.🍽️
