Ingredients

  • 🐖 Pork belly – 2 lbs
  • 🧄 Garlic – 4 cloves, minced
  • 🌿 Rosemary – 2 sprigs
  • 🧂 Salt – to taste
  • 🌶️ Black pepper – to taste
  • 🧅 Onion – 1, quartered

Instructions

  • 🔪 Score the pork belly skin in a crosshatch pattern.
  • 🧂 Season generously with salt, pepper, garlic, and rosemary.
  • 🧅 Place quartered onion in the roasting pan.
  • ♨️ Roast at 325°F (160°C) for 1 hour.
  • 🔥 Increase heat to 450°F (232°C) and roast for 30 more minutes, or until skin is crispy.
  • 🔪 Let rest for 10 minutes before slicing and serving.
