Ingredients

  • 🥩 Pork roast – 3-4 lb
  • 🧄 Garlic – 4 cloves, minced
  • 🌿 Rosemary – 2 sprigs
  • 🧅 Onion – 1 large, quartered
  • 🥕 Carrots – 2, roughly chopped
  • 🥔 Potatoes – 4 medium, quartered
  • 🧂 Salt & pepper – to taste
  • 💧 Olive oil – 2 tbsp

Instructions

  • 🔥 Preheat oven to 325°F (160°C).
  • 🔪 Season pork roast with salt, pepper, and garlic. Place in a roasting pan.
  • 🧅 Add onions, carrots, and potatoes around the roast.
  • 🌿 Drizzle with olive oil and add rosemary sprigs.
  • ⏲️ Roast for 25-30 minutes per pound, or until internal temperature reaches 145°F (63°C). Let rest before carving.
