Ingredients

  • 🍚 Dosa Batter – fermented rice and lentil mix
  • 🧈 Butter/Ghee – generous amount for roasting
  • 🌶️ Red Chutney – spicy garlic and chili paste
  • 🥔 Potato Palya – spiced mashed potato filling
  • 🥥 Coconut Chutney – for serving

Instructions

  • 🥣 Prepare a smooth batter using rice and urad dal, then ferment it for 8 hours.
  • 🔥 Heat a cast-iron tawa and pour a thick ladle of batter without spreading it too thin.
  • 🧈 Add a generous dollop of butter around the edges and spread red chutney on top.
  • 🥔 Place the potato filling in the center once the base turns golden and crispy.
  • ✨ Fold the dosa carefully and serve hot with extra butter and coconut chutney.
