Milanese Risotto

Ingredients
- 🍚 Arborio rice – 1.5 cups
- 🧅 Onion – 1 small, chopped
- 🧈 Butter – 4 tbsp
- 🧀 Parmesan cheese – grated, for serving
- 🌼 Saffron threads – a pinch
- 🍷 White wine – 1/2 cup (optional)
- 🍲 Broth – 4-5 cups, hot
Instructions
- 🔥 In a large pan, melt butter and sauté onion until softened.
- 🍚 Add Arborio rice and toast for 2-3 minutes, stirring constantly.
- 🍷 If using, add white wine and let it absorb.
- 🌼 Add saffron threads to the heated broth and stir. Gradually add broth to the rice, one ladle at a time, stirring constantly until absorbed before adding more.
- 🧀 Continue until rice is creamy and cooked al dente. Stir in Parmesan cheese and serve hot.
