Ingredients

Instructions

  • 🍳 Heat olive oil in a pan and sauté the green peppers until they soften.
  • 🍅 Stir in the diced tomatoes and cook on medium heat until they break down into a sauce.
  • 🧂 Season with salt, pepper, and red pepper flakes, mixing thoroughly.
  • 🥚 Pour the beaten eggs over the mixture and stir gently until the eggs are just set but still moist.
  • 🥖 Garnish with fresh parsley and serve warm with crusty bread for dipping.
