Ingredients
- 🍋 Lemongrass – 2 stalks, bruised
- 🌿 Galangal – 4 slices
- 🍃 Kaffir Lime Leaves – 5 leaves
- 🌶️ Thai Chilies – 4-5, crushed
- 🍄 Mushrooms – 1 cup, sliced
- 🦐 Shrimp – 1/2 lb, peeled and deveined
- 🍅 Tomatoes – 1 cup, quartered
- 🍶 Fish Sauce – 2 tbsp
- 🍈 Lime Juice – 3 tbsp
- 🥥 Coconut Milk – 1/2 cup (optional)
- 🌿 Cilantro – for garnish
Instructions
- 🍲 Boil broth with lemongrass, galangal, lime leaves, and chilies.
- 🍄 Add mushrooms and tomatoes, simmer until softened.
- 🦐 Add shrimp and cook until pink and opaque.
- 🍶 Stir in fish sauce and lime juice. Add coconut milk if desired.
- 🌿 Garnish with cilantro and serve hot.
