Ingredients

  • 🍋 Lemongrass – 2 stalks, bruised
  • 🌿 Galangal – 4 slices
  • 🍃 Kaffir Lime Leaves – 5 leaves
  • 🌶️ Thai Chilies – 4-5, crushed
  • 🍄 Mushrooms – 1 cup, sliced
  • 🦐 Shrimp – 1/2 lb, peeled and deveined
  • 🍅 Tomatoes – 1 cup, quartered
  • 🍶 Fish Sauce – 2 tbsp
  • 🍈 Lime Juice – 3 tbsp
  • 🥥 Coconut Milk – 1/2 cup (optional)
  • 🌿 Cilantro – for garnish

Instructions

  • 🍲 Boil broth with lemongrass, galangal, lime leaves, and chilies.
  • 🍄 Add mushrooms and tomatoes, simmer until softened.
  • 🦐 Add shrimp and cook until pink and opaque.
  • 🍶 Stir in fish sauce and lime juice. Add coconut milk if desired.
  • 🌿 Garnish with cilantro and serve hot.
