Lemon Coriander Rice

Ingredients
- 🍚 Cooked rice – 2 cups
- 🍋 Lemon – 1 (juice and zest)
- 🌿 Fresh coriander – chopped
- 🧅 Onion – finely chopped
- 🌶️ Green chilies – slit (optional)
- 🫘 Mustard seeds – 1 tsp
- 🥜 Cashews – a few (optional)
Instructions
- 🔥 Heat oil in a pan and add mustard seeds. Let them splutter.
- 🧅 Add onions and green chilies, sauté until light golden.
- 🍚 Add cooked rice, lemon juice, and lemon zest. Mix well.
- 🌿 Stir in fresh coriander leaves and cashews (if using).
- 🥘 Cook for a couple of minutes, then serve hot.
