Lemon Coriander Rice

Ingredients

  • 🍚 Cooked rice – 2 cups
  • 🍋 Lemon – 1 (juice and zest)
  • 🌿 Fresh coriander – chopped
  • 🧅 Onion – finely chopped
  • 🌶️ Green chilies – slit (optional)
  • 🫘 Mustard seeds – 1 tsp
  • 🥜 Cashews – a few (optional)

Instructions

  • 🔥 Heat oil in a pan and add mustard seeds. Let them splutter.
  • 🧅 Add onions and green chilies, sauté until light golden.
  • 🍚 Add cooked rice, lemon juice, and lemon zest. Mix well.
  • 🌿 Stir in fresh coriander leaves and cashews (if using).
  • 🥘 Cook for a couple of minutes, then serve hot.
