Ingredients

  • 🖤 Black Gram Dal (Urad Dal) – 1 cup soaked overnight
  • 🌱 Fenugreek Seeds – 1 tsp soaked overnight
  • 🌶️ Green Chilies – 2-3 finely chopped
  • 🌿 Ginger – 1 inch grated
  • 🧂 Salt – to taste
  • 🫙 Asafoetida (Hing) – a pinch
  • 💧 Water – as needed for grinding and fermentation
  • 🌻 Oil – for deep frying
  • 🥕 Carrots – grated (optional)
  • 🧅 Onion – chopped (optional)
  • 🌿 Cilantro – for garnish

Instructions

  • 🖤 Grind soaked dal and fenugreek seeds into a smooth batter using minimal water. Add ginger, green chilies, salt, and asafoetida.
  • 🥣 Mix well, cover, and ferment the batter in a warm place for 6-8 hours or overnight.
  • ♨️ Heat oil in a deep pan or fryer on medium heat.
  • 🥄 Take small portions of the fermented batter and gently drop them into the hot oil to make wadas.
  • 🔥 Fry until golden brown and crispy on all sides. Remove and drain excess oil on paper towels. Serve hot with chutney.
