Ingredients

  • 🥬 Kale – 1 bunch, stems removed and chopped
  • chickpeas – 1 can, rinsed and drained
  • 🍒 Cherry tomatoes – 1 cup, halved
  • 🫒 Olive oil – 2 tablespoons
  • 🍋 Lemon – juice of half a lemon
  • 🧂 Salt and pepper – to taste

Instructions

  • 🥣 Massage the chopped kale with a little olive oil in a bowl until tender.
  • 🍳 Heat remaining olive oil in a pan over medium heat.
  • 🥘 Sauté the chickpeas until they are lightly golden and slightly crispy.
  • 🥗 Combine the sautéed chickpeas and cherry tomatoes with the kale in a serving bowl.
  • ✨ Drizzle with fresh lemon juice, season to taste, and serve immediately.
