Ingredients
- 🥬 Kale – 1 bunch, stems removed and chopped
- chickpeas – 1 can, rinsed and drained
- 🍒 Cherry tomatoes – 1 cup, halved
- 🫒 Olive oil – 2 tablespoons
- 🍋 Lemon – juice of half a lemon
- 🧂 Salt and pepper – to taste
Instructions
- 🥣 Massage the chopped kale with a little olive oil in a bowl until tender.
- 🍳 Heat remaining olive oil in a pan over medium heat.
- 🥘 Sauté the chickpeas until they are lightly golden and slightly crispy.
- 🥗 Combine the sautéed chickpeas and cherry tomatoes with the kale in a serving bowl.
- ✨ Drizzle with fresh lemon juice, season to taste, and serve immediately.
