Ingredients
- 🧅 Onion – 1 diced
- 🧄 Garlic – 3 cloves minced
- 🥦 Vegetable Broth – 4 cups
- 🌿 Mixed Fresh Herbs – 1 cup (parsley, chives, basil)
- 🥔 Potatoes – 2 peeled and cubed
- 🫒 Olive Oil – 1 tbsp
Instructions
- 🔥 Heat olive oil in a large pot and sauté onions and garlic until translucent.
- 🥔 Add potato cubes and stir for a few minutes to lightly brown.
- 🍲 Pour in the vegetable broth and simmer until potatoes are tender.
- 🌿 Stir in the fresh herbs and blend the soup until smooth or leave chunky as preferred.
- ✨ Season with salt and pepper to taste and serve warm.
