Ingredients

  • Water
  • Unsalted butter: cut into pieces 🧈
  • All-purpose flour
  • Large eggs: 🥚🥚🥚🥚
  • Pinch of salt
  • Granulated sugar
  • Heavy cream: for filling 🥛
  • Powdered sugar: for filling 🍬
  • Vanilla extract: for filling 🌿

Instructions

  • Preheat oven to 400°F (200°C).🌡️
  • In a saucepan, combine water, butter, salt, and sugar. Bring to a boil over medium heat. 🥣
  • Remove from heat and add flour all at once. Stir vigorously until a smooth dough forms. 🥄
  • Return the pan to low heat and cook, stirring constantly, for 1-2 minutes, until the dough pulls away from the sides of the pan. 🔥
  • Transfer the dough to a mixing bowl and let cool slightly for 5 minutes. 🥣
  • Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next. The dough should be smooth and pipeable. 🥚
  • Transfer the dough to a piping bag fitted with a large round tip. ➡️ 💼
  • Pipe rounds of dough onto a baking sheet lined with parchment paper, spacing them 2 inches apart. 🍥
  • Bake for 25-30 minutes, or until golden brown and puffed up. Do not open the oven door during baking! ⏰
  • Let the choux pastry cool completely on a wire rack. 🆒
  • While the choux are cooling, prepare the cream filling. In a mixing bowl, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form. 🍦
  • Cut the cooled choux pastry in half horizontally. 🔪
  • Fill each choux with whipped cream. 🥄
  • Dust with powdered sugar before serving. ✨
