Chicken Spicy Thai Curry

Ingredients
- 1 tablespoon vegetable oil π±
- 1 lb chicken breast, cut into bite-sized pieces π
- 1 medium onion, chopped π§
- 3 cloves garlic, minced π§
- 1 tablespoon fresh ginger, minced π―
- 1 can coconut milk π₯₯
- 1 tablespoon red curry paste πΆοΈ
- 1 tablespoon fish sauce π
- 1 tablespoon soy sauce πΎ
- 1 tablespoon brown sugar π¬
- 1/2 cup chopped cilantro πΏ
- 1/2 cup chopped peanuts π₯
- 1 lime, juiced π
Instructions
- Heat the oil in a large pan over medium heat π₯.
- Add the chicken pieces and cook until browned πΎ.
- Add the onion, garlic, and ginger, and cook until fragrant π¬οΈ.
- Stir in the red curry paste and cook for 1 minute β±οΈ.
- Pour in the coconut milk, fish sauce, and soy sauce, and bring to a simmer π².
- Add the brown sugar and cook until the sauce thickens π₯.
- Remove from heat and stir in the cilantro and lime juice πΏπ.
- Serve over steamed rice and top with chopped peanuts ππ₯.
