Ingredients

  • 🌿 Artichokes – 4 large
  • 💧 Water – for soaking
  • 🍋 Lemon – 1/2, juiced
  • 🧄 Garlic – 2 cloves, minced
  • 🌿 Mint – fresh, chopped
  • 🌿 Parsley – fresh, chopped
  • 🧂 Salt – to taste
  • ⚫ Pepper – to taste
  • 🫒 Olive Oil – extra virgin
  • 💧 Water – 1 cup

Instructions

  • 🔪 Clean artichokes, removing tough outer leaves and prickly hay.
  • 🍋 Soak in water with lemon juice to prevent browning.
  • 🧄 Stuff artichokes with garlic, mint, and parsley.
  • 🥘 Place artichokes in a pot, add olive oil and water, season with salt and pepper.
  • 🔥 Simmer covered for about 30 minutes, or until tender. Serve warm.
