Ingredients
- 🌿 Artichokes – 4 large
- 💧 Water – for soaking
- 🍋 Lemon – 1/2, juiced
- 🧄 Garlic – 2 cloves, minced
- 🌿 Mint – fresh, chopped
- 🌿 Parsley – fresh, chopped
- 🧂 Salt – to taste
- ⚫ Pepper – to taste
- 🫒 Olive Oil – extra virgin
- 💧 Water – 1 cup
Instructions
- 🔪 Clean artichokes, removing tough outer leaves and prickly hay.
- 🍋 Soak in water with lemon juice to prevent browning.
- 🧄 Stuff artichokes with garlic, mint, and parsley.
- 🥘 Place artichokes in a pot, add olive oil and water, season with salt and pepper.
- 🔥 Simmer covered for about 30 minutes, or until tender. Serve warm.
