Ingredients

  • 🐂 Oxtail – 2-3 lbs, cut into pieces
  • 🧅 Onion – 1 large, chopped
  • 🥕 Carrots – 2 medium, chopped
  • 🌿 Celery – 2 stalks, chopped
  • 🥓 Pancetta – 4 oz, diced
  • 🍅 Tomato paste – 2 tbsp
  • 🍷 Red wine – 1 cup
  • 🌿 Herbs – rosemary, thyme, bay leaf
  • 🍫 Unsweetened cocoa powder – 1 tbsp
  • 🍇 Raisins – 1/4 cup
  • 🌰 Pine nuts – 1/4 cup
  • 🧂 Salt and pepper – to taste

Instructions

  • 🔥 Sear oxtail pieces in a large pot or Dutch oven until browned on all sides.
  • 🧅 Add onion, carrots, celery, and pancetta to the pot and cook until softened.
  • 🍷 Stir in tomato paste and red wine, then add herbs, cocoa powder, raisins, and pine nuts.
  • 🥘 Add enough broth or water to cover the oxtail. Bring to a simmer, then cover and cook for at least 3 hours, or until the oxtail is very tender.
  • ✨ Skim off any excess fat and adjust seasoning with salt and pepper. Serve hot with polenta or pasta.
