Ingredients
- 🥛 Whole milk – 500ml
- 🧈 Unsalted butter – 50g
- 🥚 Egg yolks – 3
- 🍚 Granulated sugar – 250g
- 🌾 All-purpose flour – 125g
- extract Vanilla extract – 1 tsp
- 🥃 Dark rum – 1 tbsp
Instructions
- 🔥 Melt butter and heat milk in a saucepan; do not boil.
- 🥚 Whisk sugar and egg yolks until pale. Add flour, vanilla, and rum.
- 🥛 Gradually pour warm milk into the yolk mixture, whisking continuously. Strain the batter.
- 🧊 Refrigerate the batter for at least 24 hours.
- 🌡️ Preheat oven to 450°F (232°C). Grease canele molds with beeswax.
- Pour batter into molds, leaving a little space at the top. Bake for 15 minutes, then reduce heat to 350°F (177°C) and bake for another 35 minutes, or until dark brown and caramelized.
- Cool slightly before removing from molds. Serve warm.
