Ingredients

  • 🍝 Bucatini pasta – 1 pound
  • 🥓 Guanciale or pancetta – 4 oz, diced
  • 🧀 Pecorino Romano cheese – 1 cup, grated
  • 🥚 Eggs – 3 large
  • 🖤 Black pepper – freshly ground, to taste

Instructions

  • 💧 Cook bucatini in salted boiling water until al dente.
  • 🥓 While pasta cooks, sauté guanciale until crispy.
  • 🥚 In a bowl, whisk eggs, pecorino romano, and black pepper.
  • 🍝 Reserve pasta water, drain pasta, and add to the pan with guanciale.
  • 🔥 Remove from heat, add egg mixture, and toss quickly, adding pasta water as needed to create a creamy sauce. Serve immediately.
