Ingredients
- 🍝 Bucatini pasta – 1 pound
- 🥓 Guanciale or pancetta – 4 oz, diced
- 🧀 Pecorino Romano cheese – 1 cup, grated
- 🥚 Eggs – 3 large
- 🖤 Black pepper – freshly ground, to taste
Instructions
- 💧 Cook bucatini in salted boiling water until al dente.
- 🥓 While pasta cooks, sauté guanciale until crispy.
- 🥚 In a bowl, whisk eggs, pecorino romano, and black pepper.
- 🍝 Reserve pasta water, drain pasta, and add to the pan with guanciale.
- 🔥 Remove from heat, add egg mixture, and toss quickly, adding pasta water as needed to create a creamy sauce. Serve immediately.
