Ingredients

  • 🌾 All-purpose flour – 2 cups for the hand-pulled dough
  • 💧 Water – 3/4 cup for kneading
  • 🧂 Salt – 1/2 tsp for seasoning
  • 🧄 Garlic – 3 cloves minced
  • 🌶️ Chili flakes – 2 tbsp for heat and color
  • 🧅 Green onions – 2 stalks thinly sliced
  • 🥣 Soy sauce & Black vinegar – 1 tbsp each for the sauce base
  • 🔥 Neutral oil – 3 tbsp for the hot oil sizzle

Instructions

  • 🥣 Mix flour, water, and salt into a smooth dough and let it rest for 30 minutes.
  • 🥢 Shape dough into small logs, flatten, and pull/slap them on the counter until long and wide.
  • 🍲 Boil the hand-pulled noodles in water for 2-3 minutes until they are tender and float.
  • 🥗 Drain noodles and place in a bowl, topping with garlic, onions, chili flakes, and sauce.
  • 🔥 Carefully pour smoking hot oil over the spices to release their aroma, toss well, and serve.
