Ingredients
- 🌾 All-purpose flour – 2 cups for the hand-pulled dough
- 💧 Water – 3/4 cup for kneading
- 🧂 Salt – 1/2 tsp for seasoning
- 🧄 Garlic – 3 cloves minced
- 🌶️ Chili flakes – 2 tbsp for heat and color
- 🧅 Green onions – 2 stalks thinly sliced
- 🥣 Soy sauce & Black vinegar – 1 tbsp each for the sauce base
- 🔥 Neutral oil – 3 tbsp for the hot oil sizzle
Instructions
- 🥣 Mix flour, water, and salt into a smooth dough and let it rest for 30 minutes.
- 🥢 Shape dough into small logs, flatten, and pull/slap them on the counter until long and wide.
- 🍲 Boil the hand-pulled noodles in water for 2-3 minutes until they are tender and float.
- 🥗 Drain noodles and place in a bowl, topping with garlic, onions, chili flakes, and sauce.
- 🔥 Carefully pour smoking hot oil over the spices to release their aroma, toss well, and serve.
