Ingredients
- 🍚 Arborio rice – 1.5 cups
- 🌿 Artichoke hearts – 1 can, drained and quartered
- 🧅 Shallot – 1 finely chopped
- 🧄 Garlic – 2 cloves minced
- 🥣 Vegetable broth – 5 cups warm
- 🍷 Dry white wine – 1/2 cup
- 🧀 Parmesan cheese – 1/2 cup grated
- 🧈 Butter – 2 tablespoons
Instructions
- 🍲 Heat the broth in a saucepan and keep it warm over low heat.
- 🍳 Sauté shallots and garlic in butter until soft, then stir in the rice to toast for 2 minutes.
- 🥂 Pour in the white wine and stir until fully absorbed by the rice.
- 🥄 Add the warm broth one ladle at a time, stirring constantly until the rice is creamy and tender.
- ✨ Fold in the artichoke hearts, parmesan cheese, and a knob of butter before serving warm.
