Ingredients

  • 🥘 Vathal (Sundried berries/vegetables) – 1/2 cup
  • 🧅 Shallots – 1 cup peeled
  • 🧄 Garlic – 10 cloves
  • 🍋 Tamarind – small lemon-sized ball, soaked in water
  • 🌶️ Sambar powder – 2 tbsp
  • 🧂 Turmeric powder – 1/2 tsp
  • 🍯 Jaggery – 1 small piece
  • 🧴 Sesame oil – 3 tbsp
  • 🌿 Mustard seeds and curry leaves – for tempering

Instructions

  • 🔥 Heat sesame oil in a pan and fry the vathal until crisp; remove and set aside.
  • 🧅 In the same oil, add mustard seeds, curry leaves, shallots, and garlic, sautéing until golden brown.
  • 🍅 Pour in the thick tamarind extract, add turmeric, sambar powder, and salt; boil until the raw smell vanishes.
  • 🥘 Mix in the fried vathal and jaggery, simmering until the mixture thickens into a glossy, concentrated thokku consistency.
  • ✨ Serve warm with steamed rice and a dollop of ghee for a traditional meal.
