Ingredients
- 🥘 Vathal (Sundried berries/vegetables) – 1/2 cup
- 🧅 Shallots – 1 cup peeled
- 🧄 Garlic – 10 cloves
- 🍋 Tamarind – small lemon-sized ball, soaked in water
- 🌶️ Sambar powder – 2 tbsp
- 🧂 Turmeric powder – 1/2 tsp
- 🍯 Jaggery – 1 small piece
- 🧴 Sesame oil – 3 tbsp
- 🌿 Mustard seeds and curry leaves – for tempering
Instructions
- 🔥 Heat sesame oil in a pan and fry the vathal until crisp; remove and set aside.
- 🧅 In the same oil, add mustard seeds, curry leaves, shallots, and garlic, sautéing until golden brown.
- 🍅 Pour in the thick tamarind extract, add turmeric, sambar powder, and salt; boil until the raw smell vanishes.
- 🥘 Mix in the fried vathal and jaggery, simmering until the mixture thickens into a glossy, concentrated thokku consistency.
- ✨ Serve warm with steamed rice and a dollop of ghee for a traditional meal.
