Ingredients

  • 🥔 Potato – boiled and mashed
  • 🫓 Pav – (Indian bread rolls)
  • 🌶️ Green chilies – finely chopped
  • 🧄 Garlic – minced
  • 🧅 Onion – sliced
  • 🌿 Coriander – chopped
  • 💛 Besan (gram flour) – for batter
  • 🫘 Mustard seeds – for tempering
  • 🌱 Curry leaves – for tempering
  • 🧂 Spices – turmeric, chili powder, coriander powder

Instructions

  • 🥔 Prepare potato filling: Mash potatoes, add spices, chilies, garlic, and coriander. Mix well.
  • 💛 Prepare besan batter: Mix besan with water and spices to form a thick batter.
  • 🔥 Heat oil in a pan. Make small balls from the potato mixture, dip in batter, and deep fry until golden brown (vada).
  • 🌶️ Prepare dry garlic chutney: Grind garlic, red chilies, and salt into a coarse powder.
  • 🫓 Assemble vadapav: Cut pav in half, spread chutney, insert vada, add sliced onion and serve hot.
