Ingredients

  • 🍝 Tagliatelle pasta – 200g
  • 🧀 Pecorino Romano cheese – freshly grated
  • 🖤 Black pepper – freshly cracked
  • 🍄 Truffle oil – a drizzle
  • 🧈 Butter – 2 tbsp

Instructions

  • 💧 Cook tagliatelle in salted boiling water until al dente.
  • 🧀 Reserve some pasta water, then drain the pasta. Add to pan with butter.
  • 🖤 Mix grated Pecorino Romano and black pepper in a bowl with a little pasta water to form a paste.
  • 🍝 Toss the pasta with the cheese mixture, adding more pasta water as needed to create a creamy sauce.
  • 🍄 Drizzle with truffle oil and serve immediately.
