Ingredients
- 🍝 Tagliatelle pasta – 200g
- 🧀 Pecorino Romano cheese – freshly grated
- 🖤 Black pepper – freshly cracked
- 🍄 Truffle oil – a drizzle
- 🧈 Butter – 2 tbsp
Instructions
- 💧 Cook tagliatelle in salted boiling water until al dente.
- 🧀 Reserve some pasta water, then drain the pasta. Add to pan with butter.
- 🖤 Mix grated Pecorino Romano and black pepper in a bowl with a little pasta water to form a paste.
- 🍝 Toss the pasta with the cheese mixture, adding more pasta water as needed to create a creamy sauce.
- 🍄 Drizzle with truffle oil and serve immediately.
