Ingredients

  • 🍄 Assorted Mushrooms – sliced
  • 🍚 Arborio Rice – 1.5 cups
  • 🍶 Miso Paste – 2 tbsp
  • 🧄 Garlic – 2 cloves minced
  • 🧅 Onion – 1 medium, chopped
  • 🌿 Fresh Thyme – 1 tsp chopped
  • 🧀 Parmesan Cheese – grated
  • 🍾 White Wine – ½ cup
  • 🍄‍🟫 Truffle Oil – to taste

Instructions

  • 🧅 Sauté onions and garlic in olive oil until softened.
  • 🍚 Add arborio rice and toast lightly.
  • 🍾 Deglaze with white wine, then add miso paste and broth gradually, stirring often.
  • 🍄 Sauté mushrooms separately and add to risotto.
  • 🧀 Stir in Parmesan cheese and truffle oil. Serve hot! ✨
