Tortelloni alla spuma di tartufo

Ingredients

  • 🥟 Tortelloni – 250g fresh stuffed pasta
  • ☁️ Heavy cream – 1/2 cup for the foam
  • 🍄 Truffle cream or oil – 2 tbsp for the essence
  • 🧀 Parmesan cheese – 1/4 cup freshly grated
  • 🧈 Butter – 1 tbsp unsalted
  • 🌿 Fresh parsley or chives – for garnish

Instructions

  • 🥘 Bring a large pot of salted water to a boil and cook the tortelloni according to package instructions.
  • 🥣 In a small saucepan, warm the heavy cream, butter, and truffle cream over low heat until gently simmering.
  • 🌪️ Use an immersion blender to froth the cream mixture until it becomes a light, airy foam (spuma).
  • 🍝 Drain the pasta and toss gently with a small amount of the truffle cream base to coat.
  • ✨ Plate the pasta, top with the prepared truffle foam, sprinkle with parmesan, and garnish with herbs.
