Ingredients

  • 🍝 Tonnarelli pasta – 200g
  • 🥓 Guanciale – 100g, cubed
  • 🥚 Egg yolks – 2 large
  • 🧀 Pecorino Romano – 50g, grated
  • 🖤 Black pepper – freshly ground

Instructions

  • 💧 Cook tonnarelli pasta in salted boiling water until al dente.
  • 🥓 While pasta cooks, sauté guanciale until crispy.
  • 🥚 In a bowl, whisk egg yolks with pecorino romano and black pepper.
  • 🍝 Drain pasta, reserving some pasta water. Add pasta to the pan with guanciale.
  • 🔥 Remove from heat, add egg mixture, and toss quickly, adding pasta water if needed to create a creamy sauce. Serve immediately.
