Ingredients
- 🍝 Tonnarelli pasta – 200g
- 🥓 Guanciale – 100g, cubed
- 🥚 Egg yolks – 2 large
- 🧀 Pecorino Romano – 50g, grated
- 🖤 Black pepper – freshly ground
Instructions
- 💧 Cook tonnarelli pasta in salted boiling water until al dente.
- 🥓 While pasta cooks, sauté guanciale until crispy.
- 🥚 In a bowl, whisk egg yolks with pecorino romano and black pepper.
- 🍝 Drain pasta, reserving some pasta water. Add pasta to the pan with guanciale.
- 🔥 Remove from heat, add egg mixture, and toss quickly, adding pasta water if needed to create a creamy sauce. Serve immediately.
