Ingredients

  • Anelletti pasta 🍝 - 500g
  • Ground meat 🥩 (beef or pork) - 500g
  • Tomato sauce 🍅 - 700g
  • Peas 🟢 - 200g
  • Eggplants 🍆 - 2 medium, cubed and fried
  • Caciocavallo cheese 🧀 - 200g, cubed
  • Breadcrumbs 🍞 - for coating
  • Eggs 🥚 - 3, beaten
  • Onion 🧅 - 1, chopped
  • Olive oil 🫒
  • Salt 🧂 and pepper

Instructions

  • 🍝 Cook anelletti pasta al dente. Drain and mix with a little tomato sauce.
  • 🧅 In a separate pan, sauté onion, add ground meat and cook until browned. Stir in tomato sauce and peas. Simmer for 30 minutes.
  • 🍆 Mix pasta with meat sauce, fried eggplants, and caciocavallo cheese.
  • 🥚 Brush a baking dish with olive oil and sprinkle with breadcrumbs. Layer half the pasta mixture, then cheese, then the rest of the pasta. Coat the top with beaten eggs and breadcrumbs.
  • 🔥 Bake in a preheated oven at 180°C (350°F) for about 45-60 minutes, or until golden brown.
