Thai Chicken Rice

Ingredients

  • 🍚 Rice – 2 cups, rinsed
  • 🍗 Chicken – 1 lb, cut into pieces
  • 🌿 Lemongrass – 2 stalks
  • 🧄 Garlic – 3 cloves, minced
  • 🌶️ Chili – 1, finely chopped
  • 🥥 Coconut milk – 1 can
  • 🐟 Fish sauce – 2 tbsp
  • 🍃 Cilantro – for garnish

Instructions

  • 🔥 Sauté garlic, chili, and lemongrass in a pot.
  • 🍗 Add chicken and cook until lightly browned.
  • 🍚 Stir in rice and coconut milk.
  • 🐟 Add fish sauce and water to cover the rice. Bring to a boil, then simmer until rice is cooked.
  • 🍃 Garnish with cilantro and serve hot.
