Ingredients
- 8 large prawns 🍤, peeled and deveined
- 1 cup tempura flour 🌾
- 1 cup ice water 🧊
- 1 egg yolk 🥚
- Vegetable oil for frying 🛢️
- Salt and pepper to taste 🧂
- Dipping sauce (soy sauce, ginger, daikon radish) 🍶
Instructions
- Prepare prawns: Pat dry with paper towels. Make small slits on the underside to prevent curling. 🔪
- Make batter: Whisk egg yolk and ice water in a bowl. Gradually add tempura flour, mixing lightly until just combined. Do not overmix! 🥣
- Heat oil: Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). 🔥
- Dip prawns: Dip each prawn into the tempura batter, ensuring it's fully coated. 🦐
- Fry prawns: Carefully lower battered prawns into the hot oil, a few at a time. Fry for 2-3 minutes, or until golden brown and crispy. ⏳
- Drain excess oil: Remove prawns from oil and place on a wire rack lined with paper towels to drain. 🧺
- Season and serve: Sprinkle with salt and pepper. Serve immediately with dipping sauce. 🍽️
