Ingredients

  • Rice 🍚: 2 cups
  • Sambar: 1 cup (Tamarind extract, Toor dal, Mixed vegetables 🥕🍆🍅)
  • Rasam: 1 cup (Tamarind extract, Tomatoes 🍅, Rasam powder)
  • Kootu: 1 cup (Mixed vegetables 🥬 with coconut 🥥 and lentils)
  • Poriyal: 1 cup (Stir-fried vegetables 🥕 beans)
  • Curd/Yogurt 🥣: 1 cup
  • Pickle 🥭: To taste
  • Papadum: 4
  • Ghee 🧈: 2 tablespoons
  • Salt 🧂: To taste
  • Turmeric powder: 1 teaspoon
  • Mustard seeds: 1 teaspoon
  • Urad dal: 1 teaspoon
  • Curry leaves 🌿: A few

Instructions

  • Cook rice 🍚 and keep it warm.
  • Prepare Sambar: Cook dal, vegetables, and tamarind extract with sambar powder. Temper with mustard seeds, urad dal, and curry leaves 🌿.
  • Prepare Rasam: Boil tamarind extract, tomatoes 🍅, and rasam powder. Temper with mustard seeds and curry leaves 🌿.
  • Prepare Kootu: Cook vegetables 🥕🥬 with lentils and coconut 🥥. Season with spices.
  • Prepare Poriyal: Stir-fry vegetables 🥕 beans with spices.
  • Serve hot rice 🍚 with a dollop of ghee 🧈.
  • Arrange Sambar, Rasam, Kootu, and Poriyal around the rice.
  • Serve with curd 🥣, pickle 🥭, and papadum.
