Ingredients

  • 🍝 Tagliolini pasta – fresh or dried
  • 🧀 Pecorino Romano cheese – finely grated
  • 🧈 Unsalted butter – high quality
  • 🖤 White truffle – freshly shaved
  • 🖤 Black pepper – freshly ground

Instructions

  • 💧 Cook tagliolini in salted boiling water until al dente.
  • 🧈 While pasta cooks, melt butter gently in a pan.
  • 🧀 Reserve pasta water, then add pasta to the pan with butter and some pasta water.
  • 🧀 Gradually add grated Pecorino cheese, stirring constantly to create a creamy sauce.
  • 🖤 Finish with freshly grated black pepper and shaved white truffle. Serve immediately.
