Tagliatelle Relleno

Ingredients

  • 🍅 2 cups fresh tomatoes, chopped
  • 🧀 1 cup ricotta cheese
  • 🥚 2 eggs
  • 🌿 1/2 cup fresh basil, chopped
  • 🧅 1 small onion, finely chopped
  • 🌶 1 clove garlic, minced
  • 🍖 1/2 lb ground pork
  • 🍖 1/2 lb ground beef
  • 🍝 16 oz tagliatelle pasta
  • 🧂 Salt and pepper to taste
  • 🧈 2 tbsp butter
  • 🍾 1/2 cup red wine
  • 🧂 1 tsp dried oregano
  • 🧂 1/2 tsp dried thyme

Instructions

  • 🍳 Brown the ground pork and beef in a skillet over medium heat. Add the onion and garlic, cook until fragrant.
  • 🥄 Stir in the chopped tomatoes, season with salt, pepper, oregano, and thyme. Simmer for 20 minutes.
  • 🥞 In a bowl, mix the ricotta, eggs, basil, and a pinch of salt and pepper.
  • 🍝 Cook the tagliatelle pasta according to the package instructions until al dente.
  • 🧈 In a large pan, melt the butter over medium heat. Add the cooked pasta and pour in the red wine, toss to coat.
  • 🍴 Stuff each tagliatelle noodle with a spoonful of the ricotta mixture and place them in a baking dish.
  • 🍲 Pour the tomato meat sauce over the stuffed tagliatelle, cover with foil, and bake at 350°F for 25 minutes.
  • 🔥 Remove the foil and bake for an additional 10 minutes to brown the top.
