Ingredients

  • 🥚 Tagliatelle pasta – 200g
  • 🥓 Pancetta – 100g, diced
  • 🥚 Eggs – 2 large
  • 🧀 Parmesan cheese – 50g, grated
  • 🥛 Cream – 50ml (optional)
  • 🖤 Black pepper – to taste

Instructions

  • 💧 Cook tagliatelle in boiling salted water until al dente.
  • 🥓 While pasta cooks, fry pancetta until crispy.
  • 🥚 Whisk eggs and Parmesan (and cream, if using) with black pepper.
  • 🍝 Drain pasta, reserving some pasta water. Add pasta to pancetta.
  • 🔥 Remove from heat. Quickly stir in egg mixture, adding pasta water if needed to create a creamy sauce. Serve immediately.
