Ingredients
- 🥚 Tagliatelle pasta – 200g
- 🥓 Pancetta – 100g, diced
- 🥚 Eggs – 2 large
- 🧀 Parmesan cheese – 50g, grated
- 🥛 Cream – 50ml (optional)
- 🖤 Black pepper – to taste
Instructions
- 💧 Cook tagliatelle in boiling salted water until al dente.
- 🥓 While pasta cooks, fry pancetta until crispy.
- 🥚 Whisk eggs and Parmesan (and cream, if using) with black pepper.
- 🍝 Drain pasta, reserving some pasta water. Add pasta to pancetta.
- 🔥 Remove from heat. Quickly stir in egg mixture, adding pasta water if needed to create a creamy sauce. Serve immediately.
