Ingredients
- 🥩 Beef (Tafelspitz cut) – 2-3 lbs
- 🧅 Onion – 2, quartered
- 🥕 Carrots – 3, roughly chopped
- 🌿 Celery – 2 stalks, roughly chopped
- 🧄 Garlic – 4 cloves, crushed
- 🌱 Bay leaf – 2
- 🌶️ Peppercorns – 1 tbsp
- 💧 Water – enough to cover the meat
- 🧂 Salt – to taste
Instructions
- 🥩 Place beef in a large pot and cover with water. Add onion, carrots, celery, garlic, bay leaf, peppercorns, and salt.
- ♨️ Bring to a boil, then reduce heat to low, cover, and simmer gently for 2.5-3 hours, or until the beef is very tender.
- 🥕 Remove the beef from the pot and slice it against the grain. Strain the broth and discard the solids.
- 🍲 Serve the sliced beef in the broth with traditional accompaniments like horseradish sauce, creamed spinach, and potatoes.
- ✨ Garnish with fresh parsley before serving.
