Ingredients
- 🐷 Suckling Pig – 1 whole
- 🌿 Fresh Herbs (rosemary, thyme) – 2 sprigs each
- 🧄 Garlic – 6 cloves, crushed
- 🍋 Lemon – 1, quartered
- 💧 Olive Oil – 4 tbsp
- 🧂 Salt – to taste
- 🌶️ Black Pepper – to taste
Instructions
- 🔥 Preheat oven to 325°F (160°C).
- 🔪 Prepare the pig by scoring the skin in a diamond pattern.
- 🌿 Rub the pig with olive oil, crushed garlic, herbs, salt, and pepper. Place lemon quarters inside the cavity.
- 🥘 Place the pig on a roasting rack in a large pan and add water to the bottom of the pan.
- ✨ Roast for approximately 3 hours, or until the skin is crispy and golden brown and the internal temperature reaches 185°F (85°C).
