Ingredients

  • 🐑 Suckling lamb – 1 whole
  • 🍋 Lemon – 1, juiced
  • 🧄 Garlic – 6 cloves, minced
  • 🌿 Rosemary – 2 sprigs
  • 🫒 Olive oil – 4 tbsp
  • 🥔 Potatoes – 1 kg, quartered
  • 🧅 Onions – 2, quartered
  • 🥕 Carrots – 2, chopped

Instructions

  • 🔪 Prepare the lamb by rubbing with lemon juice, garlic, rosemary, salt, and pepper.
  • 🥔 Place potatoes, onions, and carrots in a roasting pan.
  • 🐑 Place the lamb on top of the vegetables and drizzle with olive oil.
  • 🔥 Roast in a preheated oven at 325°F (160°C) for about 2 hours, or until tender.
  • ✨ Let rest for 10 minutes before carving and serving.
