Ingredients
- 🐑 Suckling lamb – 1 whole
- 🍋 Lemon – 1, juiced
- 🧄 Garlic – 6 cloves, minced
- 🌿 Rosemary – 2 sprigs
- 🫒 Olive oil – 4 tbsp
- 🥔 Potatoes – 1 kg, quartered
- 🧅 Onions – 2, quartered
- 🥕 Carrots – 2, chopped
Instructions
- 🔪 Prepare the lamb by rubbing with lemon juice, garlic, rosemary, salt, and pepper.
- 🥔 Place potatoes, onions, and carrots in a roasting pan.
- 🐑 Place the lamb on top of the vegetables and drizzle with olive oil.
- 🔥 Roast in a preheated oven at 325°F (160°C) for about 2 hours, or until tender.
- ✨ Let rest for 10 minutes before carving and serving.
