Spaghettoni all'Amatriciana

Ingredients
- 🍝 Spaghettoni pasta – 1 pound
- 🥓 Guanciale – 4 oz, cubed
- 🍅 Canned San Marzano tomatoes – 28 oz
- 🧀 Pecorino Romano cheese – grated
- 🌶️ Red pepper flakes – to taste
- 🧅 Onion - 1 small, finely chopped
- 🍷 Dry white wine - 1/4 cup (optional)
Instructions
- 🥓 Render guanciale in a pan until crispy. Remove guanciale and set aside, leaving the rendered fat in the pan.
- 🧅 Sauté onion in the rendered fat until softened. Deglaze with white wine (if using).
- 🍅 Add canned tomatoes, crushing them with your hands. Season with red pepper flakes and salt.
- 🍝 Cook the spaghettoni according to package directions. Reserve some pasta water before draining.
- 🥘 Add the cooked pasta to the sauce. Toss with the guanciale and Pecorino Romano cheese. Add pasta water if needed to create a creamy sauce. Serve immediately.
