Spaghettoni all'Amatriciana

Ingredients

  • 🍝 Spaghettoni pasta – 1 pound
  • 🥓 Guanciale – 4 oz, cubed
  • 🍅 Canned San Marzano tomatoes – 28 oz
  • 🧀 Pecorino Romano cheese – grated
  • 🌶️ Red pepper flakes – to taste
  • 🧅 Onion - 1 small, finely chopped
  • 🍷 Dry white wine - 1/4 cup (optional)

Instructions

  • 🥓 Render guanciale in a pan until crispy. Remove guanciale and set aside, leaving the rendered fat in the pan.
  • 🧅 Sauté onion in the rendered fat until softened. Deglaze with white wine (if using).
  • 🍅 Add canned tomatoes, crushing them with your hands. Season with red pepper flakes and salt.
  • 🍝 Cook the spaghettoni according to package directions. Reserve some pasta water before draining.
  • 🥘 Add the cooked pasta to the sauce. Toss with the guanciale and Pecorino Romano cheese. Add pasta water if needed to create a creamy sauce. Serve immediately.
