Ingredients
- 🐔 Chicken carcass – 1 whole
- 💧 Water – 12 cups
- 🧅 Onion – 1 quartered
- 🧄 Garlic – 4 cloves
- ginger – 1 inch knob
- 🍶 Sake – 1/4 cup
- 🧂 Salt – to taste
- 🍜 Noodles – for serving
- 🟢 Scallions – chopped for garnish
Instructions
- 💧 Place chicken carcass, onion, garlic, ginger, and water in a large pot. Bring to a boil, then reduce heat and simmer for 4 hours, skimming occasionally.
- 🍶 Add sake and salt to taste. Simmer for another 30 minutes.
- 🍲 Strain the broth through a fine-mesh sieve.
- 🍜 Cook noodles according to package directions.
- 🟢 Serve hot broth over noodles, garnished with scallions.
