Ingredients

  • 🍚 Rice noodles – flat, soaked
  • 🍤 Shrimp – peeled and deveined
  • 🫘 Tofu – firm, cubed
  • 🥚 Eggs – lightly beaten
  • 🥜 Peanuts – crushed
  • 🌿 Bean sprouts – fresh
  • 🍋 Lime – wedges
  • 🌶️ Pad Thai sauce – (tamarind, fish sauce, sugar)

Instructions

  • 🔥 Stir-fry tofu and shrimp until cooked.
  • 🥚 Push to one side, add eggs and scramble lightly.
  • 🍜 Add noodles and Pad Thai sauce, toss well.
  • 🌿 Mix in bean sprouts, peanuts, and serve immediately.
  • 🍋 Garnish with lime wedges and extra peanuts.
