Ingredients
- 🥔 Mixed vegetables (drumstick, pumpkin, okra) – 1 cup
- 🧅 Onion – 1 medium, chopped
- 🍅 Tomato – 1 medium, chopped
- 🌿 Sambar powder – 2 tablespoons
- 💧 Tamarind pulp – 2 tablespoons
- 🌱 Coriander leaves – for garnish
- 🫘 Toor dal (split pigeon pea) – 1/2 cup, cooked
Instructions
- 🔥 Heat oil in a pot, add mustard seeds, cumin seeds, and dried red chilies. Let them splutter.
- 🧅 Add onions and sauté until golden brown. Add tomatoes and cook until soft.
- 🥕 Add the mixed vegetables, sambar powder, turmeric powder, and salt. Sauté for 2 minutes.
- 🥘 Add cooked dal, tamarind pulp, and water. Bring to a boil and simmer for 20 minutes, or until the vegetables are cooked.
- 🌿 Garnish with coriander leaves and serve hot with rice.
