Ingredients
- 🐖 Pigling – 1 whole, cleaned
- 🌿 Rosemary – fresh sprigs
- 🧄 Garlic – minced
- 🍋 Lemon – 1, quartered
- 🧅 Onion – quartered
- 🥕 Carrots – roughly chopped
- 🥔 Potatoes – small, whole
- Olive Oil – for drizzling
- 🧂 Salt & Pepper – to taste
Instructions
- 🔥 Preheat oven to 325°F (160°C).
- 🔪 Prepare the pigling by rubbing with olive oil, salt, pepper, minced garlic, and rosemary.
- 🧅 Stuff the cavity with lemon quarters, onions, and additional rosemary sprigs.
- 🥕 Place the pigling on a roasting rack surrounded by carrots and potatoes.
- ⏳ Roast for approximately 2 hours, or until the internal temperature reaches 170°F (77°C), basting occasionally with pan juices.
