Ingredients

  • 🐖 Pigling – 1 whole, cleaned
  • 🌿 Rosemary – fresh sprigs
  • 🧄 Garlic – minced
  • 🍋 Lemon – 1, quartered
  • 🧅 Onion – quartered
  • 🥕 Carrots – roughly chopped
  • 🥔 Potatoes – small, whole
  • Olive Oil – for drizzling
  • 🧂 Salt & Pepper – to taste

Instructions

  • 🔥 Preheat oven to 325°F (160°C).
  • 🔪 Prepare the pigling by rubbing with olive oil, salt, pepper, minced garlic, and rosemary.
  • 🧅 Stuff the cavity with lemon quarters, onions, and additional rosemary sprigs.
  • 🥕 Place the pigling on a roasting rack surrounded by carrots and potatoes.
  • ⏳ Roast for approximately 2 hours, or until the internal temperature reaches 170°F (77°C), basting occasionally with pan juices.
