Ingredients
- 🍗 Chicken or Beef Roast – 1.5kg
- 🥔 Potatoes – 1kg, peeled and quartered
- 🥕 Carrots – 500g, roughly chopped
- 🧅 Onions – 2, quartered
- 🌿 Herbs (Rosemary, Thyme) – sprigs
- 🧄 Garlic – 4 cloves, crushed
- 🧂 Salt & Pepper – to taste
- 🥄 Olive Oil – 2 tbsp
Instructions
- 🔥 Preheat oven to 200°C (180°C fan/Gas Mark 6).
- 🥔 Toss potatoes, carrots, and onions with olive oil, salt, pepper, and herbs.
- 🍗 Place roast in a roasting tin, rub with olive oil, salt, pepper, and crushed garlic.
- 🥘 Arrange vegetables around the roast.
- ⏲️ Roast for 1.5 hours or until meat is cooked and vegetables are tender. Let rest before carving.
