Ingredients
- 🥩 Beef roast – 3-4 lbs
- 🥔 Potatoes – 1.5 lbs, quartered
- 🥕 Carrots – 1 lb, chopped
- 🧅 Onion – 1 large, quartered
- 🧄 Garlic – 4 cloves, minced
- 🌿 Rosemary – 2 sprigs
- 🧂 Salt & Pepper – to taste
- 🫒 Olive Oil – 2 tbsp
Instructions
- 🔥 Preheat oven to 450°F (232°C).
- 🧂 Season beef roast generously with salt, pepper, and minced garlic.
- 🫒 Sear the roast in a hot pan with olive oil on all sides.
- 🥕 Place potatoes, carrots, and onions in a roasting pan, then place the seared roast on top.
- 🌿 Add rosemary sprigs. Roast for 15 minutes at 450°F (232°C), then reduce heat to 325°F (163°C) and continue roasting until desired doneness is reached.
- 🌡️ Use a meat thermometer to check the internal temperature. Let rest for 10-15 minutes before slicing and serving.
