Ingredients

  • 🍝 Rigatoni pasta – 1 pound
  • 🥓 Guanciale – 4 ounces, cubed
  • 🧀 Pecorino Romano cheese – 1 cup, grated
  • 🖤 Black pepper – freshly ground, to taste
  • 💧 Pasta water – reserved

Instructions

  • 💧 Cook rigatoni in salted boiling water until al dente, reserve pasta water.
  • 🥓 Render guanciale in a pan until crispy. Remove from heat, set aside some rendered fat.
  • 🖤 Toast black pepper in the guanciale fat. Add a little pasta water to emulsify.
  • 🍝 Toss cooked pasta in the pan with guanciale and pepper. Add pecorino and pasta water to create a creamy sauce.
  • 🧀 Serve immediately with extra pecorino and black pepper.
