Ingredients
- 🍝 Rigatoni pasta – 1 pound
- 🥓 Guanciale – 4 ounces, cubed
- 🧀 Pecorino Romano cheese – 1 cup, grated
- 🖤 Black pepper – freshly ground, to taste
- 💧 Pasta water – reserved
Instructions
- 💧 Cook rigatoni in salted boiling water until al dente, reserve pasta water.
- 🥓 Render guanciale in a pan until crispy. Remove from heat, set aside some rendered fat.
- 🖤 Toast black pepper in the guanciale fat. Add a little pasta water to emulsify.
- 🍝 Toss cooked pasta in the pan with guanciale and pepper. Add pecorino and pasta water to create a creamy sauce.
- 🧀 Serve immediately with extra pecorino and black pepper.
