Ingredients

  • 🦪 Mussels – 1 kg, cleaned
  • 🥥 Coconut Milk – 1 can
  • 🌶️ Red Curry Paste – 2 tbsp
  • 🌿 Fresh Basil – for garnish
  • 🧅 Onion – 1 medium, chopped
  • 🧄 Garlic – 2 cloves, minced
  • 🐟 Fish Sauce – 1 tbsp
  • 🍋 Lime – 1, juiced

Instructions

  • 🧅 Sauté onion and garlic in a pot until softened.
  • 🌶️ Stir in red curry paste and cook for 1 minute.
  • 🥥 Add coconut milk and fish sauce, bring to a simmer.
  • 🦪 Add mussels, cover, and cook until they open (5-7 minutes).
  • 🌿 Garnish with fresh basil and a squeeze of lime before serving.
