Ingredients
- 🦪 Mussels – 1 kg, cleaned
- 🥥 Coconut Milk – 1 can
- 🌶️ Red Curry Paste – 2 tbsp
- 🌿 Fresh Basil – for garnish
- 🧅 Onion – 1 medium, chopped
- 🧄 Garlic – 2 cloves, minced
- 🐟 Fish Sauce – 1 tbsp
- 🍋 Lime – 1, juiced
Instructions
- 🧅 Sauté onion and garlic in a pot until softened.
- 🌶️ Stir in red curry paste and cook for 1 minute.
- 🥥 Add coconut milk and fish sauce, bring to a simmer.
- 🦪 Add mussels, cover, and cook until they open (5-7 minutes).
- 🌿 Garnish with fresh basil and a squeeze of lime before serving.
