Ingredients

  • 1 cup Yogurt (plain, sour)
  • 1/4 cup Gram flour (besan)
  • 4 cups Water
  • 1 tbsp Ghee or Oil
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Cumin seeds
  • 1/4 tsp Fenugreek seeds
  • 1/4 tsp Asafoetida (hing)
  • 1 inch Ginger (grated)
  • 1-2 Green chilies (chopped)
  • 8-10 Curry leaves
  • 1/2 tsp Turmeric powder
  • 1/2 tsp Red chili powder
  • 1/4 tsp Coriander powder
  • Salt to taste 🧂

Instructions

  • In a bowl, whisk together yogurt, gram flour, and water until smooth. Ensure no lumps remain. 🥣
  • Heat ghee or oil in a pot over medium heat. 🔥
  • Add mustard seeds, cumin seeds, and fenugreek seeds. Let them splutter. ✨
  • Add asafoetida, grated ginger, and chopped green chilies. Sauté for a few seconds. 🌶️
  • Add curry leaves and sauté briefly.🌿
  • Add turmeric powder, red chili powder, and coriander powder. Sauté for another few seconds. 🥄
  • Pour in the yogurt mixture and stir continuously to prevent curdling. 🔄
  • Add salt to taste. 🧂
  • Bring the kadhi to a simmer, then reduce the heat to low and let it simmer for 20-25 minutes, stirring occasionally. The kadhi should thicken slightly. 🍲
  • Garnish with fresh coriander leaves (optional). 🌱
  • Serve hot with rice or roti. 🍚
