Ingredients
- 1 cup Yogurt (plain, sour)
- 1/4 cup Gram flour (besan)
- 4 cups Water
- 1 tbsp Ghee or Oil
- 1/2 tsp Mustard seeds
- 1/2 tsp Cumin seeds
- 1/4 tsp Fenugreek seeds
- 1/4 tsp Asafoetida (hing)
- 1 inch Ginger (grated)
- 1-2 Green chilies (chopped)
- 8-10 Curry leaves
- 1/2 tsp Turmeric powder
- 1/2 tsp Red chili powder
- 1/4 tsp Coriander powder
- Salt to taste 🧂
Instructions
- In a bowl, whisk together yogurt, gram flour, and water until smooth. Ensure no lumps remain. 🥣
- Heat ghee or oil in a pot over medium heat. 🔥
- Add mustard seeds, cumin seeds, and fenugreek seeds. Let them splutter. ✨
- Add asafoetida, grated ginger, and chopped green chilies. Sauté for a few seconds. 🌶️
- Add curry leaves and sauté briefly.🌿
- Add turmeric powder, red chili powder, and coriander powder. Sauté for another few seconds. 🥄
- Pour in the yogurt mixture and stir continuously to prevent curdling. 🔄
- Add salt to taste. 🧂
- Bring the kadhi to a simmer, then reduce the heat to low and let it simmer for 20-25 minutes, stirring occasionally. The kadhi should thicken slightly. 🍲
- Garnish with fresh coriander leaves (optional). 🌱
- Serve hot with rice or roti. 🍚
